Our Smoked Products
We’re incredibly lucky to have our own smoker on the premises which enables us to smoke most of our own products on-site – this is done over pure oak. We mainly smoke salmon and haddock but we also smoke tuna, trout and prawns.

We source the finest quality salmon from small independent farms in the Shetlands – widely regarded as being among the best in the world. The secret to our award-winning salmon is to dry-cure it for 24 hours first, then we smoke it gently over pure oak for 18 hours. It is then ready to be thinly sliced by hand and packaged.
Smoked roasted salmon
Our smoked roasted salmon is hugely popular. We wet cure it in dark brown sugar and salt for 24 hours before smoking it for 12 hours. We finish off the cooking process in the oven. Perfect either on its own or in a fresh salad.
Smoked haddock is one of our bestselling smoked products. We source our haddock from Scotland, and like our smoked salmon, it’s dry cured first and then smoked over oak for 8-10 hours. An average sized fillet only takes 20 minutes to cook in a medium oven, making it perfect for a quick supper, or for a healthy breakfast with a poached egg on top.
Our smoked kippers are shipped in from the Isle of Man and are known as Manx kippers.
We smoke large shell-on prawns gently over oak for 6-8 hours for a delicate smokey flavour. They’re ready to eat and make a great starter or snack.
